If you are wanting to root a new device that has never been turned on, it’s best to try to complete the initial setup without installing any updates. Depending on the model and software version already on the device, this might not be possible. If you can’t avoid installing an update during the initial setup, at the very least be sure to immediately kill the device’s internet connection once the initial setup is complete, because additional updates may try to install after the one during the initial setup. It may help to limit your internet speed or use a slow connection, like a mobile hotspot with poor reception, when possible.
